Best Flour for Baking in Nigeria 2024

What differentiates one type of wheat flour from the other is the amount of protein contained therein. The protein content determines the gluten content in essence.
Gluten is important because it is responsible for creating the texture and structure of a cake. High-gluten (or high-protein) wheat flours are called hard flours and have a better feel in bread and pizza. Low-gluten flours are called soft or weak flours and are used in making cakes and soft pastries.
There are different types of flours used in baking, finding out which is best depends really on what you want to bake.

All-purpose Flour

This contains a protein content of about 9 to 11 percent which covers a mixture of hard and soft flour. It is the most commonly used flour for a wide range of baked products, like: bread, cake, pastries and so on. It is also the most readily available type of flour in local markets.

Cake Flour

Cake flour is a weak flour with a protein content of 5 to 8 percent. This makes it form less gluten and give a soft and moist texture to cakes. Cake flour is the best flour for baking cakes because it can absorb a higher amount of liquid and sugar which makes the cake fluffy.

Bread Flour

Bread flour is 12 – 14 percent high in gluten, which makes it suitable for yeast bread. It helps you achieve bread crumbs. Bread flour is the best flour for baking bread and cinnamon rolls. It is almost impossible to find a substitute for bread flour, because the other types of flour do not contain as much protein needed to make the bread rise properly and achieve the ideal texture.

Pastry Flour

It strikes a certain balance between cake flour and all-purpose flour. It contains 8 to 9 percent gluten. Pastry flour is best used for pancakes, cookies, biscuits and pastries.

Self-rising Flour

It is simply a mixture of baking powder with a small measure of salt. It is similar to all-purpose flour and can be substituted by it. It can be used for pizza dough, cupcakes and sponge cakes. Self-rising flour is not very marketable in Nigeria, but you can make it at home. Simply add two teaspoons of 150g/60z all purpose flour, sieve the flour and baking powder, then add your baking powder (and cocoa powder if you want).

Reasons For Hike in Flour Price in Nigeria

The Nigerian market has not fully recovered from the hike in food prices, after the lockdown in 2020. The price of flour also increased drastically which affected the prices of flour made products like bread, cake and pastries.
This hike in flour price is traceable to the following reasons.

Importation costs

Wheat is the most commonly used agricultural produce used in making flour powder in Nigeria. It is used to make the all purpose flour which is the most marketable and readily available type in the country. But Nigeria has a weak domestic production of wheat, as a result, there is an imbalanced scale of the demand and supply chain. This makes us rely on foreign countries for supply. Hence, the increase in cost of importing wheat into Nigeria just like other food items which is done to encourage local production.

Increase in Dollar Value

Economic factors have led to a depreciation in the value of Naira currency and the most acceptable currency for importation is the US Dollar, which has drastically increasing in value against Naira as a currency. Currently, $1 is equal to N415.365, this makes importation expensive, resulting in a hike in price of flour across board.

One of the most unstable experiences Nigeria suffers is the hike in price of foodstuffs, therefore condition your mind and pockets to be ready to adjust to new prices of flour when you go to the market to buy. However, the location where the purchase is made may see to a decrease in price when compared to other localities.
